  1. Beat the bananas, peanut butter, honey, cinnamon and vanilla together with an electric mixer until smooth.
  2. Stir in the oats and nuts. 
  3. Spread the mixture into a square baking pan. Bake in a preheated 350-degree F oven for about 30 minutes or until edges begin to brown. Cool completely and then cut into squares.

Hi MarcBcn . I have frozen these successfully. When I'm ready to defrost, I remove them from the freezer and allow to thaw in the fridge overnight. Then, I pop them in the microwave for 30 seconds (natch!) or so to warm them up, and they turn out really well. Hope they do for you as well! Donna John

They looked great on paper, but these were awful. They were bland with no good consistency. The proportions are all wrong.

Thanks for the tip on freezing them. Going to make another batch of these and keep them in the freezer for my kids' school lunches. They'll be thawed out by lunchtime! I enjoy these for breakfast often. I like to sprinkle some cinnamon on top before baking.
