Creamy Chicken Cauliflower Casserole Recipe: Chicken + Broccoli + Cauliflower + 2 Cheeses = Heaven

Chicken, broccoli and cauliflower combine to make a healthy, flavorful, creamy casserole that the whole family will love. The fact that this easy dinner recipe is infused with two different cheeses is just a bonus. Serve over rice or pasta, or stuff it into a baked potato. Enjoy the garlicky goodness!

Ingredients

  • 1 pound skinless/boneless chicken breasts, cut into small chunks
  • 1 pound skinless/boneless chicken thighs, cut into small chunks
  • Sea salt, to taste
  • Freshly ground black pepper, to taste
  • 4 tablespoons olive oil
  • 1 teaspoon chopped garlic
  • 1 package (5.2 ounces) Boursin garlic and herb cheese
  • 1 medium head cauliflower, chopped
  • 1 - 2 broccoli crowns, chopped
  • 1 teaspoon Mediterranean spices (I used Weber)
  • 1 cup shredded cheddar cheese

Here’s how to make it:

Preheat oven to 350 degrees F. In a large bowl, add the broccoli, cauliflower, salt, pepper, Mediterranean spices and 2 tablespoons of the olive oil. Toss everything to combine, ensuring vegetables are coated with the mixture.

Spoon vegetables into an 13x9-inch baking pan or casserole dish that’s been sprayed with nonstick cooking spray. Bake for about 15 minutes, until vegetables are crisp-tender.

While vegetables are baking, in a large sauté pan, heat 2 tablespoons of the olive oil over medium heat. Add the chicken and stir. Simmer until cooked through, about 10 minutes. Add the Boursin cheese and garlic to the pan, and stir until melted to combine.

Remove vegetables from oven and add chicken mixture on top of the cauliflower and broccoli mixture, making sure to drizzle all the creamy juices from the pan.

Top the casserole with the shredded cheddar cheese.

Cover the casserole tightly with foil and bake for 15 to 20 minutes, or until cheese is melted.

Serve over rice, pasta or potatoes. Top with additional shredded cheese, if desired.
