Recipe Notes

  • You can use bottled lemon juice, but if you can, squeeze fresh lemon juice. Fresh is always best.
  • Herbs add a freshness to the eggs. Try fresh rosemary, thyme, dill, basil or oregano.

Here's how to make it:

  1. Crack the eggs into a bowl. Season with salt and pepper. Pour in the lemon juice. Whisk until blended.
  2. Melt the butter in a nonstick pan over medium-low heat. When butter starts to bubble, pour in the eggs. Using a rubber spatula, start swirling the eggs around until they are slightly set, about 30 seconds.
  3. Start making up and down swirls in the other direction as the eggs cook, another 30 seconds to 1 minute, depending on how you like your eggs.
  4. Remove eggs from the heat. Season with salt and pepper and garnish with fresh chopped herbs, if desired.

I made these this morning. Absolutely delicious. Loved the lemon flavor. Very refreshing. And they were so fluffy. I only did two eggs, but used the whole 1 tablespoon of lemon juice and garnished with fresh dill. My new go-to scrambled egg recipe! Elisa A. Schmitz 30Seconds

I made these today, too, Donna John ! I added a half teaspoon of Mediterranean herb seasoning to mine. They were delicious. I’m using more lemon next time, because I got just a hint of lemon and want more, lol! So good. And so fluffy! What a fun recipe. 😀

Bet this technique would make a fluffy omelette, too. Maybe put spinach, chopped tomatoes and parmesan in it. Or leftover salmon? :-) Elisa A. Schmitz 30Seconds
