Chip-Crusted Chicken Breasts Recipe: This Pan-fried Chicken Recipe Is a Chip Outta the Old Bag

On my journey to stop throwing out so much food, I found myself with several almost-empty bags of chips that were mostly crumbs. Instead of tossing them, I came up with this easy chip-crusted pan-fried chicken breast recipe. You can use any flavor of chip – from plain potato chips to nacho cheese chips to vinegar-flavored chips to barbecue chips. I used smoked gouda multigrain chips.

Prep Time: 5 minutes
Cook Time: 10 to 15 minutes
Total Time: 15 to 20 minutes


Here's how to make it:

Put the chip crumbs into a plastic zipper bag. (If you don't use plastic in the kitchen, put them in a bowl.) Crush. Season the chicken with salt and pepper and coat in the chip crumbs.

Heat a little olive oil in a skillet. Cook the chicken until golden brown on both sides and cooked through, about 10 to 15 minutes depending on how thick the chicken breasts are.
