It's a delicious, flavorful dinner.
Green onions, garlic, fresh ginger, a scotch bonnet pepper (just one!), vegetable oil, fresh lime juice, soy sauce, brown sugar, black pepper, allspice, cinnamon and salt are blitzed in a blender until smooth to create the marinade. Bone-in chicken pieces are marinated in the intensely flavored mixture for two to four hours, then it is baked in the oven for about 1 hour or until cooked through. So easy!

- juice of 3 limes
- 2 tablespoons brown sugar
- 1 teaspoon black pepper
- 2 teaspoons allspice

- You could use boneless chicken for this recipe, but reduce the cooking time.
- Store any leftover chicken in an airtight container in the fridge for up to three days.
Here's how to make it:
- Put all the marinade ingredients into a blender. Blend until smooth.
- Put the chicken pieces into a plastic zipper bag. Add the marinade. Marinate the chicken in the refrigerator for 2 to 4 hours.
- When ready to cook, put the chicken into a baking pan. Bake in a preheated 375-degree F oven for about 45 minutes to 1 hour or until chicken is cooked through.
