This easy chicken casserole recipe is loaded with spinach and artichoke hearts and is cheesy, cheesy, cheesy. Did we mention it's cheesy? Better save this recipe for cheat night.

All you need to make this creamy gluten-free casserole is a bag of frozen spinach, artichoke hearts, shredded cooked chicken, cream cheese, sour cream and grated cheese. You combine the ingredients, pour them into a baking pan, top with cheese then bake it all up. Best of all, this simple and delicious dinner recipe is on the table in only about 30 minutes.

Serve this hearty casserole on its own, or with a fresh vegetable or salad on the side. Yum!

Ingredients

  • 16 ounces (1 bag) frozen chopped spinach, thawed and squeezed dry
  • 16 ounces (1 bag) frozen artichoke hearts, thawed and chopped
  • 3 1/2 cups cooked shredded chicken
  • 8 ounces cream cheese, softened
  • 2 cups sour cream
  • 2 cups grated Gruyere, Monterey Jack, Swiss cheese or white cheddar, or a combination (divided)
  • 2 cups freshly grated Parmesan cheese (divided)

  • You can divide the ingredients in two, using a casserole dish and a disposable 8x8-inch baking pan with a lid, if you want to freeze one for later.
  • If you'd like some heat, you can add a sprinkle of red pepper flakes.
  • You can use Gruyere, Monterey Jack, Swiss cheese, white cheddar or a combination of cheeses. 
  • You can serve this recipe on its own, or over pasta or rice or with your favorite sides.
  • Store leftovers in an airtight container in the refrigerator or freezer.

Here's how to make it: 

  1. In a large bowl, combine the spinach, artichoke hearts, chicken, cream cheese, sour cream, 1 cup of the Gruyere (or other cheese) and 1 cup of the Parmesan. Season with salt and pepper. Stir to combine. 
  2. Pour into a 13x9-inch baking pan. Top with the remaining 1 cup Gruyere (or other cheese) and 1 cup Parmesan. 
  3. Bake in a preheated 425-degree F oven for about 20 to 25 minutes, until cooked through and golden brown. Serve as is or with your favorite side dish.
