Ingredients
- 1 1/2 pounds asparagus, trimmed and cut into 1/2-inch pieces
- 1 tablespoon butter
- 1 onion, chopped
- 2 cloves garlic, minced
- 2 cups chicken broth or vegetable broth
- 1 teaspoon lemon juice
- 3/4 cup heavy whipping cream
- olive oil and chopped fresh herbs, for garnish
Here's how to make it:
- Melt the butter in a soup pot. Cook the onion until soft, about 4 minutes. Add the garlic and cook 30 seconds.
- Add the asparagus and cook about 5 minutes.
- Pour in the broth and lemon juice. Season with salt and pepper. Simmer for about 10 minutes or until asparagus are soft.
- Use an immersion blender and puree in the pot or pour the soup into a blender, blend until smooth and return to pot.
- Add the cream and heat through. Do not boil. Taste and add more salt and pepper, if needed. Garnish with a drizzle of olive oil and chopped fresh herbs.
