  • Store the soup for up to four days in the refrigerator.
  • Some people like to top split pea soup with a little sour cream, heavy cream or crunchy croutons. Try it!

Here's how to make it: 

  1. Heat the olive oil in a Dutch oven. Add the onion and celery and cook until soft, about 3-4 minutes. Add the garlic and cook 30 seconds.
  2. Add the chicken broth, water, split peas, bay leaves and thyme. Season with salt and pepper.
  3. Put the ham bone into the pot. Bring to a boil, reduce heat and simmer about 1 hour or until peas are tender. 
  4. Remove the ham bone from the soup. Add the carrots and chopped ham. Cook about 30 more minutes or until carrots are tender.

I have this on my stove right now ...since I tend to be vegetarian/vegan (actually will eat fish upon occasion) I used smoked paprika and a dash or two of soy sauce and worcestershire in place of the ham. It smells great and I love pea soup so I think this is going to be awesome
