Recipe Notes

  • To ensure the cake releases from the pan, be sure to spray it with nonstick cooking spray.
  • The powdered sugar dusting is optional, but we think it adds a nice touch.
  • To make this cake gluten-free, use gluten-free flour.
  • Store leftover cake in an airtight container in the refrigerator.

Here's how to make it:

  1. In a large mixing bowl or the bowl of your electric mixer, cream together the butter and sugar until fluffy.
  2. Add the egg, apples, walnuts and vanilla. Mix well.
  3. Combine the baking powder, baking soda, salt, cinnamon, nutmeg and flour. Stir to combine and then add to the wet ingredients. Pour the batter into a round Springform pan that's been sprayed with nonstick spray.
  4. Bake in a preheated 350-degree F oven for about 45 minutes. Remove from pan and dust with powdered sugar. Serve warm with whipped cream, if desired.

I’m not seeing what size pan to use. With 2 c apples it sure seems like it would have to go in a large maybe springform pan as a 9” and certainly an 8” cake pan seems too small.
Thoughts from those who’ve tried this recipe.

9-inch round springform pan. Correct!
