Moist Irish Apple Cake Recipe: This Fresh Apple Cake Has the Luck of the Irish

Loaded with tart apples, this easy Irish apple cake recipe is the perfect way to end your St. Patrick's Day meal. Maybe this easy dessert recipe will bring you a little luck, too? Well, you'll at least be lucky to eat it!

The cake is made with butter, granulated sugar, an egg, sliced or diced fresh apples, chopped walnuts, flour, baking soda, baking powder, dash of salt, ground cinnamon and ground nutmeg. The ingredients combine to make the cake batter, then is baked in the oven for about 45 minutes. The final step before eating it is to dust the top with powdered sugar.

This moist Irish apple cake recipe is perfect served with a dollop of whipped cream, vanilla ice cream or drizzled with grandma's old-fashioned spiced vanilla hard sauce. For the kids, whip up some St. Patrick's Day Rice Krispies Treats, cupcakes with green mint icing, leprechaun thumbprints or shamrock ice cream pie. Now everyone will have the luck of the Irish!

Ingredients

  • 4 tablespoons butter, softened 
  • 1 cup granulated sugar
  • 1 egg
  • 4 apples, cored, peeled and diced or sliced (about 2 cups)
  • 1/4 cup chopped walnuts
  • 1 teaspoon vanilla
  • 1 cup flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • dash of salt
  • 1 teaspoon cinnamon
  • 1/2 teaspoon ground nutmeg
  • powdered sugar, for dusting

Here's how to make it: 

  1. Cream together the butter and sugar until fluffy.
  2. Add the egg, apples, walnuts and vanilla. Mix well.
  3. Combine the baking powder, baking soda, salt, cinnamon, nutmeg and flour. Stir to combine and then add to the wet ingredients. Pour the batter into a round baking pan that's been sprayed with nonstick spray.
  4. Bake in a preheated 350-degree F oven for about 45 minutes. Remove from pan and dust with powdered sugar. Serve warm with whipped cream.
