- 1 tablespoon olive oil
- 1 1/2 pounds boneless, skinless chicken thighs, cut into 1-inch chunks
- 1 onion, chopped
- 3 tablespoons tomato paste
- 4 cloves garlic, minced
- 1 tablespoon freshly grated ginger
- 2 teaspoons garam masala
- 1 1/2 teaspoons chili powder
- 1 1/2 teaspoons ground turmeric
- 1 can (15 ounces) tomato sauce
- 1 cup chicken broth
- 1/2 cup heavy cream
- chopped fresh cilantro leaves, for garnish
- rice, for serving
Here's how to make it:
- Heat the oil in a large soup pot. Season the chicken with salt and pepper. Add the chicken and onions to the hot oil and cook until chicken is browned and cooked through, about 5 minutes.
- Add the tomato paste, garlic, ginger and spices. Cook another 30 seconds.
- Add the tomato sauce and chicken broth. Bring to a boil, reduce heat and simmer until sauce begins to thicken, about 8 to 10 minutes.
- Pour in the heavy cream and heat through. Serve over rice and garnish with cilantro.
