Yum! I saw Stanley Tucci eat this on "Searching for Italy" last night. If you haven't watched that new series on CNN, I highly recommend it. My grocery store sells pieces of Parmesan rinds. I bet you could simmer the broth on very low for a little bit with a piece of rind in it before adding the tortellini to add some Parmesan flavor to the broth. Love simple recipes like this!

So savory and delicious. Simple, too. Genius! Donna John , I love your idea for how to add Parmesan flavor. I sprinkle shredded Parm on everything I can, haha!
