Because there are just two ingredients, make sure you use the best! Use homemade chicken broth, if possible, for the best results. Store-bought chicken broth can be used, but be sure it's a good-quality one. Serve this easy Italian soup recipe with hot, crusty bread. For color, you could sprinkle the soup with some fresh chopped herbs.

Ingredients

  • 2 quarts chicken broth
  • 1 pound cheese tortellini, fresh or frozen
  • chopped parsley, for garnish (optional)

  1. Bring the chicken stock to a boil in a soup pot. Add the tortellini and cook until it floats to the top.
  2. Remove from the heat. Season with salt and pepper, if needed. Ladle into soup bowls and garnish with chopped parsley, if desired.

Yum! I saw Stanley Tucci eat this on "Searching for Italy" last night. If you haven't watched that new series on CNN, I highly recommend it. My grocery store sells pieces of Parmesan rinds. I bet you could simmer the broth on very low for a little bit with a piece of rind in it before adding the tortellini to add some Parmesan flavor to the broth. Love simple recipes like this!
