Recipe Notes

  • For variations, you could easily add garlic, crushed red pepper flakes, pesto, green peas, mushrooms or cooked chicken into the sauce.
  • To make fettuccine Alfredo, cook fettuccine in salted water until al dente. Using a pasta spoon or tongs, transfer the pasta directly from the cooking pot with water into the sauce. This will allow some of the cooking water on the noodles to help thin the sauce a bit. Stir to combine and then add another 1/2 cup of Parmesan cheese.
  • You can use this sauce as a base for a pizza.

Here's how to make it:

  1. Put the heavy cream and butter into a skillet. Cook over medium heat until butter melts and is thoroughly incorporated into the cream.
  2. Add the grated Parmesan cheese and stir until melted.

Oh no. Oh no. Oh no no no no no!

This is Alla Panna - not Alfredo. Alfredo has zero cream in it - just the other 2 ingredients and pasta water.
