Quick Blueberry Baked Oatmeal Recipe Is a Sweet Start to Your Day

Baked oatmeal recipes are really popular, and for good reason: they're easy, healthy and delicious! If you want to try this good-for-you food trend, here's an easy baked blueberry oatmeal recipe to serve for brunch or breakfast

The baked oatmeal is made with healthy oats, milk, brown sugar, butter, eggs, baking powder, cinnamon, vanilla and blueberries. The ingredients mix together quickly and are baked for 30 minutes. The aroma in the house while it is baking will make you drool, but wait until you taste it. Delicious! 

This baked oatmeal recipe is perfect on its own, but feel free to drizzle with a little honey or maple syrup. You could also serve this blueberry oatmeal recipe as dessert with a little whipped cream or vanilla ice cream.

Ingredients

  • 1 1/2 cups rolled oats
  • 1/2 cup milk or nut milk
  • 1/3 cup brown sugar
  • 1/4 cup melted butter
  • 2 eggs
  • 1 teaspoon baking powder
  • 1 teaspoon cinnamon
  • 1 teaspoon vanilla extract
  • dash of salt
  • 1 cup fresh or frozen blueberries
  • 3/4 cup chopped walnuts (optional)

Here's how to make it: 

  1. Put all ingredients except blueberries and walnuts (if using) into a bowl.
  2. Mix until well combined.
  3. Fold in blueberries and walnuts (if using).
  4. Pour the batter into an 8x8-inch baking pan, loaf pan or glass baking dish.
  5. Bake in a preheated 350-degree F oven for about 30 minutes.

Made a vegan version of this and it's amazing! Used peaches instead of blueberries, olive oil instead of butter, flax eggs instead of regular eggs, and maple syrup instead of sugar. Also changed vanilla extract to almond extract, almonds instead of walnuts, and used allspice instead of cinnamon. Turned out fabulous! So many different ways to make this recipe. Thank you!
