Crispy Chicken-fried Steak Recipe With Evaporated Milk Cream Gravy

Chicken-fried steak with cream gravy is found on tables all across the South. This easy chicken-fried steak recipe is the best because of the evaporated milk used in the cream gravy. Evaporated milk makes the gravy super rich. Spoon it over the crispy fried cubed steaks, and your mouth will be so happy.

Serve these skillet-fried chicken fried steaks and gravy with your favorite side dishesMashed potatoes or rice are almost a must to mix with the milk gravy. Add a fresh vegetable and a salad and you have a meal made in southern heaven.

Ingredients

  • 4 cubed steaks
  • milk or buttermilk, for dipping
  • 2 eggs
  • 1/2 cup flour
  • 1/2 teaspoon garlic powder
  • vegetable oil, for frying

Gravy

  • 3 tablespoons oil from pan drippings
  • 3 tablespoons flour
  • 2 cans (12 ounces each) evaporated milk
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder

Here's how to make it: 

  1. Put the eggs into a shallow bowl. In another bowl, combine the flour, garlic powder, black pepper and salt, to taste. Pour some milk into a third bowl.
  2. Heat about a 1/4 inch of vegetable oil in a frying pan. 
  3. Dip the steaks into the milk, then into the egg, then into the flour. Shake gently to remove the excess. 
  4. Put the steaks into the hot oil and cook until well browned on both sides. Transfer to paper towels and keep warm.
  5. To make the gravy, remove all but about 3 tablespoons of the pan drippings. Sprinkle in the flour and stir until a paste forms. Slowly pour in the evaporated milk and whisk to combine. Bring to a boil and cook until thickened. Season with salt and pepper, to taste. Serve over the steaks.

There is nothing like a good chicken-fried steak. There's a restaurant here that has my favorite, and they serve it with a jalapeno cream gravy. You could easily make this recipe and saute some chopped jalapenos in the pan drippings before adding the flour. Yep, that's what I'm going to do. :-)
