Recipe Notes

  • Sometimes I will use just Rice Chex or Corn Chex instead of buying two boxes of cereal.
  • Store the snack mix in an airtight container on the counter.

Here's how to make it:

  1. Combine the cinnamon and sugar. Set aside. In a small pot, melt together the brown sugar, butter and corn syrup.
  2. Boil the mixture for 1 minute, stirring constantly.
  3. Put the cereal in a large bowl. Pour the caramel over the cereal and sprinkle in 3/4 of the cinnamon-sugar mixture. Mix well.
  4. Spread the mixture on a  cookie sheet. Top with the remaining cinnamon-sugar mixture. Bake in a preheated 350-degree F oven for 5 minutes. Remove and cool before storing in an airtight container.

This stuff is so good! Instead of having two boxes of Chex cereal leftover after making this, I just used 9 cups of Rice Chex. Now just have a little leftover and you couldn't tell.

Oh, yum! I love Chex cereal. Such a bonus that this recipe is gluten-free, because it's so hard to find yummy GF snack recipes. Thanks, Donna John ! #yum

First let me say these are great. I have saved and used more of your recipes than any others I have run across lately. This one finally got me to sign up and comment.

I did make a couple of changes since I didn't want cinnamon. I used some sea salt instead and added a splash of vanilla to the caramel when it came off the burner.

Think next time I'll add some salted peanuts and maybe some mini pretzels.

Thanks and keep up the good work.
