Chocolate Peppermint Cookies With White Chocolate Glaze Recipe: Christmas Cookies Too Pretty to Eat

Rich chocolate cookies dipped in white chocolate and then bedazzled with crushed peppermints will add sparkle to your holiday cookie tray – and delight your taste buds. Make a batch or two to give as gifts.

You'll need:

White Chocolate Glaze

Topping

Here's how to make them:

  1. In a small pot, melt the butter and 1/2 cup of the chocolate chips. Stir until smooth. Set aside to cool slightly.
  2. In bowl, combine the flour, cocoa powder, baking powder, baking soda and dash of salt. Stir to combine. 
  3. In another bowl, combine the brown sugar, eggs and peppermint extract. Mix well. Add the melted chocolate and stir until well combined. Add the dry ingredients. Stir in the remaining 1/2 cup of chocolate chips.  
  4. Roll the mixture into balls and place on cookie sheets that have been covered with parchment paper. Lightly press the cookies to flatten slightly. Bake in a preheated 325-degree F oven for 8-10 minutes, or until the edges are set but centers still a little underdone. Remove from pans to cool. 
  5. To make the white chocolate glaze, melt the white chocolate chips and coconut oil together. When the cookies are cool, dip half of the cookie into the melted chocolate and then sprinkle with the crushed candy canes. Allow the chocolate to harden before storing in airtight containers.
