If you're not having a big Thanksgiving dinner this year because of the coronavirus pandemic, you're not alone. Instead of baking a big turkey, try this easy cranberry-glazed turkey breast recipe that'll feed just a few.
You'll need:
- 1 boneless turkey breast
- olive oil
Cranberry Sauce
- 1 cup fresh cranberries
- 1 sprig fresh rosemary
- 1 sprig fresh thyme
- 1/2 cup sugar
- 2 tablespoons water
- 2 tablespoons orange juice
Here's how to make it:
- To make the cranberry sauce, combine all the ingredients in a pot. Bring to a boil, reduce heat and cook until cranberries start to burst, stirring often, about 10-15 minutes. Remove the herbs and mash until sauce is smooth. Set aside.
- For the turkey breast, season it with salt and pepper, to taste. Drizzle with olive oil. Place it in a baking dish.
- Cover the turkey breast with the cranberry sauce. Bake in a preheated 375-degree F oven for 40-45 minutes, or until the internal temperature reaches 165 degrees F. Allow the turkey breast to rest for about 10 minutes before cutting. Serve with any leftover cranberry sauce.
