The Best Fried Bologna Sandwich Recipe: Don't Judge Until You Try It

Fried bologna sandwiches? Yep. My husband and I rediscovered our love for fried bologna sandwiches during the pandemic. Needless to say, bologna was never on my shopping list, but for some reason when stocking up at the beginning of the pandemic, everything was fair game again.

For me, a fried bologna sandwich for lunch is simple: fresh white plain ol' sandwich bread (think Mrs. Baird's, Sunbeam), super-crisp fried bologna, Muenster cheese and Dijon mustard. That's it. No toasting of the bread and no fancy toppings. Serve with chips (Puffed Cheetos ups the ahhhh factor) and you're done.

To make what I believe is the perfect fried bologna sandwich here is your budget-friendly shopping list: soft white sandwich bread, bologna, Dijon mustard, mayonnaise and cheese. If you must fancy it up, add lettuce, tomato and sliced red onion.

Serve this old-fashioned, humble sandwich for lunch or dinner with a side salad or bowl of soup.

  • Muenster is my favorite cheese, but gouda, Havarti, Swiss, provolone, mozzarella or gruyere would be good choices, too.
  • Use at least two slices of bologna per sandwich.
  • Cutting slits around the border of the bologna keeps it from curling up in the pan.

Here's how to make it: 

  1. Cut slits on the outer edges of the bologna. (This keeps it from puffing up in the middle, a trick I learned from my grandma.)
  2. Put the bologna into a hot frying pan. When the first side is browned, flip them over.
  3. Add slices of cheese to one of the bologna slices. Top with the other piece of bologna. Fry until crisp and browned on both sides and cheese is melting out into the pan. 
  4. Spread Dijon mustard, mayonnaise or Miracle Whip onto the bread slices. Top with the hot bologna. Add any additional toppings you desire. Serve hot.

Mmmm! I remember this sandwich from my childhood but haven't had one since. Great tip about cutting slits in the bologna. Same thing happens when I fry salami, so I'm going to try this with salami, too. Thanks for the yummy comfort food idea, Donna John !

Not sure what made me buy bologna again when I was stocking up for pandemic, but it's continued. Free COVID pass to eat it? lol It does bring back memories and there's just something about it.
