Corn is combined with just a few simple vegetarian ingredients and fried in a skillet 'til golden. Here's what you need to make these easy, delicious, low-sodium vegetable fritters: corn, flour, sugar, baking powder, eggs, heavy cream (or milk), fresh dill and canola oil.

Serve this easy fritter recipe with your favorite dipping sauce such as remoulade, spicy mayo or even a Cajun dipping sauce. These yummy fritters make a fun snack any time of day. They're also a tasty appetizer for parties and gatherings!

Ingredients

  • 3 cups corn kernels
  • 1 cup flour
  • 1 tablespoon sugar
  • 1 teaspoon baking powder
  • 2 eggs, beaten
  • 3/4 cup heavy cream, milk or nut milk 
  • 2 sprigs fresh dill, or to taste
  • canola oil, for frying

  • Start with 2 sprigs fresh dill, shredded. Feel free to add more or less dill, depending on your tastes.
  • If you'd like some heat, you can add a sprinkle of red pepper flakes.
  • If you would like these fritters to be gluten-free, use gluten-free flour.
  • You can use olive oil instead of canola oil, if desired. 
  • The number of fritters depends on the size of the mounds you make.
  • You could sprinkle some shredded Parmesan cheese on top of the fritters, if desired.
  • Store leftovers in an airtight container in the refrigerator.

Here's how to make them:

  1. Combine the corn, flour, sugar and baking powder. Season with salt and pepper, to taste. Stir to combine.
  2. Add the eggs, cream and dill. Stir together thoroughly. 
  3. Heat a thin layer of oil in a skillet. Scoop the corn fritter batter in mounds into the pan and press to flatten. Fry until golden, about 3 minutes, then flip and cook another 3 or so minutes on the other side. Remove to paper towels. 
  4. Season with additional salt and pepper, if desired. Garnish with additional dill, if you like, and serve with your favorite dipping sauces.
