If you want this olive vinaigrette salad dressing recipe a little chunkier, stir in more chopped olives after blending. Serve over fresh romaine lettuce or your favorite salad greens.

Ingredients
- 1/2 cup pitted kalamata olives, chopped
- 1/4 cup red wine vinegar
- 1 tablespoon Dijon mustard
- 3/4 cup olive oil
- 1 large shallot, minced
- 1 teaspoon chopped fresh thyme (substitute 1/2 teaspoon dried thyme if you can't find fresh)
Here's how to make it:
Put the olives, vinegar and mustard into a blender. Turn the blender on and slowly drizzle in the olive oil. Blend until smooth.
Pour into a bowl and stir in the shallot and thyme. Season with salt and pepper, to taste.
Pour into a cruet or airtight container until ready to use.
