Black Olive Vinaigrette Recipe: If You Love Olives, This Will Be Your Favorite Salad Dressing Recipe by Donna John
Olive this salad dressing. (Sorry, had to do it.) If you want this vinaigrette salad dressing recipe a little chunkier, stir in more chopped olives after blending. Serve over fresh romaine lettuce or your favorite salad greens.
- 1/2 cup pitted kalamata olives, chopped
- 1/4 cup red wine vinegar
- 1 tablespoon Dijon mustard
- 3/4 cup olive oil
- 1 large shallot, minced
- 1 teaspoon chopped fresh thyme (substitute 1/2 teaspoon dried thyme if you can't find fresh)
Here's how to make it:
Put the olives, vinegar and mustard into a blender. Turn the blender on and slowly drizzle in the olive oil. Blend until smooth.
Pour into a bowl and stir in the shallot and thyme. Season with salt and pepper, to taste.
Pour into a cruet or airtight container until ready to use.
