Frito Pie Casserole Recipe: This Ground Beef & Bean Frito Pie Casserole Recipe Has a Tasty Kick to It

Corn chips in a pie? Oh, heck yes. This baked Frito pie recipe is a little different than others because of the addition of corn and sour cream. Kick this ground beef and bean casserole up a notch with some diced jalapeno – if you dare. So easy and so flavorful.

Cuisine: Mexican/American
Prep Time: 5 minutes
Cook Time: 35 minutes
Total Time: 40 minutes

Servings: 4 to 6

Here’s how to make it:

  1. Brown the ground beef with the chopped onion. Drain.
  2. Add the beans, tomato sauce, diced tomatoes, corn, taco seasoning and 1/2 cup of the cheddar cheese.
  3. Spread 1 cup of the corn chips on the bottom of an 8x8-inch baking dish. Pour the chili mixture over the top. Bake in a preheated 350-degree F oven for 20 minutes.
  4. Remove from the oven and spread the sour cream over the top. Cover with the remaining corn chips and cheese. Bake about 5 minutes more. Garnish with green onions before serving.

We're having Frito pies tonight! But I'm just making a pot of chili, then adding Fritos, cheese and chopped onions on top. Nothing better. Going to try this soon, though.
