The grill doesn't have to be fired up to make beef fajitas. These juicy beef fajitas cook in one skillet and in 20 minutes. You can't beat that for a quick and easy, low-sodium family dinner during the week or for when friends and family gather on the weekends.

To make this one-pan skillet beef fajita recipe you will need just a few simple ingredients. Here is your gluten-free shopping list for this Tex-Mex dinner: flank or skirt steak, olive oil, garlic, fresh limes, fresh cilantro, ground cumin, chili powder, crushed red pepper flakes, colorful bell peppers (green, orange, yellow and/or red), onion and tortillas for serving. 

Serve this easy fajita recipe with guacamolefresh salsa, shredded cheese, sliced or grilled avocados, sour cream, chopped cilantro or whatever toppings you enjoy.

Beef, Peppers and Onions

  • 2 pounds skirt steak or flank steak
  • 2 bell peppers (red, orange, yellow or green, or a combination), sliced
  • 1 large onion, sliced

  • Use skirt steak or flank steak for this easy recipe, and allow at least one hour to marinate the meat.
  • To make this meal gluten-free, use corn tortillas.

Here's how to make it:

  1. Combine all the marinade ingredients in a plastic food storage bag. Add the steak and allow it to marinate in the refrigerator for at least 1 hour and up to 5 hours.
  2. Heat a small amount of olive oil in a skillet. Remove the steak from the marinade and cook it in the hot skillet until desired doneness. Remove the steak from the pan and allow it to rest while you make the peppers and onions.
  3. Add the peppers and onion to the pan and cook until softened, about 5 to 7 minutes. Season with salt and pepper. 
  4. Slice the steak against the grain and serve with the peppers and onions in warmed tortillas with desired toppings.
