Chewy Chocolate-Covered Cherry Cookie Recipe Is a Sweet Holiday Treat

This delicious chocolate cookie recipe hides a fun surprise in the center – a maraschino cherry. This easy chocolate cookie recipe is the perfect addition to your Christmas cookie tray!

To make these low-sodium chocolate-covered cherry cookies, you need to grab a few things from your fridge and pantry. Here is what you'll need to start baking: flour, cocoa powder, butter, sugar, salt, baking powder, baking soda, an egg, vanilla extract, a jar of maraschino cherries, semisweet chocolate chips and a can of sweetened condensed milk.

  • If you have leftover frosting, it makes a decadent dip for sugar cookies or chunks of pound cake for dessert. Sounds delicious, right? It is!
  • For easier cleanup, cover the baking sheets with parchment paper.

Here's how to make it:

  1. Combine the flour and cocoa powder in a bowl. Mix well.
  2. Beat the butter until smooth, about 30 seconds, with an electric mixer. Add the sugar, salt, baking powder and baking soda. Beat well. Add the egg and vanilla.
  3. Gradually incorporate the flour and cocoa mixture.
  4. Drain the cherries, reserving the juice. Pat them dry with a paper towel. Roll the dough into 1-inch balls and place on a cookie sheet. Use your thumb and make a hole (don't go all the way through) in the center of each cookie. Put one cherry in each hole.
  5. To make the frosting, in a small saucepan combine the chocolate chips and sweetened condensed milk. Melt over low heat. When melted, add 4 teaspoons of the reserved cherry juice. Mix well.
  6. Spoon about 1 teaspoon of the frosting over each cookie to cover the cherry. Bake in a preheated 350-degree F oven for 9 to 10 minutes. Allow to cool on a wire rack or foil.
