Halloween Side Dishes: How to Make Roasted Cinnamon Sweet Potato "Jack 'o Lanterns"

Sweet potatoes turn into fun jack 'o lanterns with just a knife and a little imagination, and are the perfect side dish for your Halloween dinner. Let older kids (with adult supervision, of course!) cut out the faces. 

You'll need:

Here’s how to make them:

  1. With a sharp knife, cut out pumpkin faces in the sweet potatoes. Lay them on a lightly oiled baking sheet.
  2. Spray the sweet potatoes with olive oil cooking spray or brush olive oil on lightly with a pastry brush. Sprinkle with salt and cinnamon sugar.
  3. Bake in a preheated 450-degree F oven for about 18-20 minutes.
