This Mushroom Rice Recipe Will Make Boxed Rice Mixes Wave the White Flag by Gwen Johnson
Growing up, we ate those rice box mixes all the time. Nothing wrong with them, really, but when making a flavored rice from scratch is so easy, why not do it? This mushroom rice recipe is ready in about 30 minutes and is packed with flavor, so it may be time to surrender the box.
- 1 teaspoon butter
- 1 teaspoon olive oil
- 1 cup chopped mushrooms
- 1 small onion, chopped
- 2 cloves garlic, minced
- 2 cups chicken or vegetable broth
- 1 cup long-grain rice
- chopped, fresh parsley (optional)
Here's how to make it:
- Heat the butter and olive oil in a skillet. Add the mushrooms and onion and cook until softened, about 5 minutes. Add garlic and cook an additional minute. Season with salt and pepper, to taste.
- Add the broth and rice and bring to a boil. Reduce heat to low, cover and simmer about 20 minutes or until rice is tender. Stir in parsley and serve.
