This mushroom rice recipe is ready in about 30 minutes and is packed with flavor, so it may be time to finally surrender the box mix for good. All you need to make this quick gluten-free, low-sodium mushroom rice recipe is olive oil, fresh mushrooms, onion, garlic, chicken broth and long-grain rice. Recipe Notes

  • Use whatever kind of mushrooms you like for this rice recipe. Try a combination!
  • You could use shallots instead of onion.
  • Love garlic? Measure it with your heart.
  • To make this recipe vegetarian, use vegetable broth instead of chicken broth.

Here's how to make it:

  1. Heat the olive oil in a skillet. Add the mushrooms and onion and cook until softened, about 5 minutes. Add garlic and cook an additional minute. Season with salt and pepper, to taste.
  2. Add the broth and rice and bring to a boil. Reduce heat to low, cover and simmer about 20 minutes or until rice is tender. Stir in parsley and serve.
