This easy buffalo cauliflower recipe makes a flavorful snack, meatless taco filling or fiery side dish. The heat factor will depend on the brand of buffalo sauce used – some can get pretty hot.
There's so much flavor packed into these little snack bites, your mouth won't know what hit it. If you're vegan, be sure to check the ingredients, as some contain butter.

Ingredients
- 1/2 head cauliflower
- 3 teaspoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon chili powder
- 1/4 - 1/3 cup buffalo sauce (depending on how saucy and spicy you want it)
Here's how to make it:
Cut the cauliflower into small florets and put into a bowl.
Add the garlic powder, chili powder, olive oil and buffalo sauce. Mix well. Season with black pepper.
Pour onto a baking sheet and spread so it's in one layer. Bake in a preheated 425-degree F oven for about 30 minutes, stirring halfway through.
