Carrot & Raisin Salad Recipe: This Old-Fashioned Carrot & Raisin Salad Recipe Is Naturally Sweet & Tangy

My grandma used to serve this old-fashioned carrot and raisin salad. As a kid, it was not a favorite, but as an adult it has found its way into my heart. It's a healthy and naturally sweet and tangy salad or side dish the whole family can enjoy.

Ingredients

  • 3 cups grated carrots
  • 1/2 cup raisins
  • 3/4 cup mayonnaise 
  • 1 tablespoon Dijon mustard
  • 2 tablespoons chopped shallots or green onions
  • 1 teaspoon lemon juice

Here's how to make it:

  1. Combine the mayo, mustard, shallots/green onions and lemon juice. 
  2. Stir in the carrots and raisins. Season with salt and pepper. Refrigerate until ready to serve.
