Homemade salad dressings are so much better for you than those bottles you buy next to the packaged croutons on aisle 6. Here’s my simple recipe for lemon vinaigrette.

Ingredients
- 1 teaspoon finely grated lemon zest
- 3 tablespoons freshly squeezed lemon juice, preferably from Meyer lemons
- 1 teaspoon sugar or honey
- 1/4 teaspoon Dijon mustard
- 1/4 teaspoon fine sea salt, or to taste
- 4 - 5 tablespoons extra-virgin olive oil
Here’s how to make it:
- In a small bowl, whisk together the lemon zest, lemon juice, sugar, mustard and sea salt. Whisk until the sugar and salt are dissolved.
- Add the olive oil in a slow stream, whisking constantly until the dressing is well blended and emulsified. Season with salt and freshly ground black pepper.
