Curry Roasted Cauliflower Will Convert Any Cauliflower Cynic

Cauliflower dusted with curry and roasted until golden brown? And you thought you didn't like cauliflower...

You'll need:

1 head cauliflower, rinsed and lightly chopped
2 tablespoons olive oil
1 teaspoon curry powder
1/4 teaspoon kosher salt
1/8 teaspoon fresh ground pepper

Here’s how to make it:

  1. In a large mixing bowl, drizzle olive oil over cauliflower to lightly coat.
  2. Sprinkle curry powder, kosher salt and fresh ground pepper over and gently toss. Add additional olive oil, if needed. Spread the cauliflower onto a rimmed baking sheet. 
  3. Bake in a preheated 350-degree F oven for 20 minutes. Gently toss and continue baking for approximately 20 additional minutes until lightly browned.
