This Creamy Tater Tot Casserole Recipe With Beef & Cheese Is an Easy Minnesota "Hotdish"

Everyone else calls it casserole – in Minnesota, we call it hotdish! I never liked tater tot hotdish and wondered why others did. What was so great about it? 

When I started cooking around age 15, my stepdad asked for tater tot hotdish, so my sister and I made up our own version. It doesn't use canned soup, and instead has sour cream and cheese. It improves this dinner recipe like magic. 

I hope you like this potato casserole as much as my family does. The recipe makes 12 servings. You know what that means? Leftovers!

Ingredients

  • 1 bag (2 pounds) tater tots
  • 1 pound ground beef (or ground turkey)
  • 1 medium onion, chopped
  • 2 cans (14 ounces each) cans French-cut green beans, drained
  • 2 cans (4 ounces each) mushrooms (optional)
  • 1/4 cup flour
  • 2 cups milk
  • 1/2 cup sour cream
  • 2 cups shredded Cheddar or Mozzarella cheese

Here’s how to make it:

  1. Brown the ground beef and onion. Do not drain.
  2. Stir in flour. Slowly stir in milk. Add green beans (any vegetable can be substituted) and mushrooms, if using. Add sour cream and simmer mixture until slightly thickened.
  3. Place half the bag of tater tots on the bottom of a greased 9x13-inch pan. Pour meat mixture over tater tots. Put remaining tater tots on top.
  4. Cover with foil and bake at 400 degrees F for 1 hour. Remove foil and cover hotdish with the cheese. Bake an additional 5 minutes.

My wife and I made this and we thought it was weird that it included no spices at all. We always make the first time exactly to the recipe, and we found this to be super bland. That's saying a lot, my wife is from Ohio, and thinks catsup is a hot sauce :-) We'll try it again some time, but we'll add maybe a can of chopped green chilies, and some minced garlic to liven it up some.

Thank you for your feedback. If you look at a "classic" tator tot casserole recipe it's just hamburger, onions, Tator tots and cream of mushroom soup. Adding green beans, mushrooms, sour cream and cheese adds A LOT believe me. I was just trying to make the classic version better. Not supposed to be spicy. Make the classic one, compare and you will see. My MIL made it the classic way and my husband abt died eating mine bc it was a HUGE improvement. All his siblings ask for mine to this day. It's not supposed to be spicy. I would not call it bland bc cheese and sour cream makes it very creamy. My kids ask for it weekly. Everyone I ever served it to loves it bc they all grew up with the classic kind. Remember, most of my recipes are made to be kid friendly. If that isn't what you are looking for (easy, kid friendly, not tons of ingredients, budget friendly food for families) then look for a Mexican version maybe. Nobody has ever called any of my recipes bland so I think maybe that's regional. You probably grew up somewhere spicy things are the norm.
