Creamy Jalapeno Popper Chicken Soup Recipe Is Absolutely Delicious

Who doesn't love jalapeno poppers? This jalapeno popper chicken soup recipe takes those flavors and turns them into a thick, flavorful soup! This creamy jalapeno popper soup is absolutely delicious and you need to make it ASAP.

The soup has lots of flavorful ingredients: jalapenos, red onion, bell pepper or poblano pepper, chicken stock, potatoes, corn, cooked shredded chicken, crispy bacon, cheddar cheese, cream cheese, fresh parsley and heavy cream. They all cook up together on the stovetop for a deliciously creamy Mexican-inspired soup.

You may be leery about adding four jalapenos, but trust me, the soup is not overly spicy at all. Add 'em! If you use a poblano instead of a bell pepper, the soup will be spicier. You could add a can of drained white beans to the soup for added fiber. Who doesn't need a little extra fiber in their diet? This creamy chicken soup recipe will become a family favorite for lunch or dinner.

Cuisine: American
Prep Time: 20 minutes
Cook Time: 35 minutes
Total Time: 55 minutes
Servings: 4 to 6

Ingredients

  • 1 tablespoon olive oil
  • 4 large jalapenos, minced
  • 1 red onion, chopped
  • 1 large bell pepper or poblano pepper, chopped
  • 6 cups chicken stock
  • 2 potatoes, cubed
  • 1 bag (16 ounces) frozen corn
  • 2 - 3 cups cooked, shredded chicken
  • 4 - 5 strips bacon, cooked crisp and crumbled
  • 2 cups cheddar cheese
  • 1 package (8 ounces) cream cheese, softened
  • fresh chopped parsley
  • 1 cup heavy whipping cream

Here's how to make it:

  1. Cook the jalapenos, onion and pepper in the olive oil until soft.
  2. Add the chicken stock and potatoes. Cook until potatoes are tender.
  3. Stir in the corn, cooked chicken, cooked bacon, cheddar cheese, cream cheese and a little parsley. Cook until cheese is melted.
  4. Add the cream and slowly heat through. Season with salt and pepper, to taste.

the ingredients in this would probably make a dietician cringe, but for me, bring it on!

How "hot" is it? Do I need to drink milk with every bite? I'm a jalapeno sissy.
Donna John
It's not that hot. Just make sure to remove the seeds and ribs. :-)

When add shredded chicken don't say in recipe
hayman568
Great without chicken added made half batch it gone
Donna John
Great idea to leave the chicken out for vegetarians. You add the chicken, if using, in step 3.

This soup is delicious! I made it exactly like the printed recipe except for one thing which may seem a little weird...after tasting, it seemed a little acidic so.....I added some sugar in it, and then it was absolutely perfect! I just put in enough to bring about a slight sweetness, and it was probably about four tablespoons. That may seem like a lot, but no one commented on it tasting sweet, they just gobbled it up including hubby who said it was really good and isn't overly fond of soups. This is one I'll be making again!!
Donna John
That makes me so happy that ya'll enjoyed it! I wonder where the acidity came from? Hmm. But glad you figured it out! Thanks for letting me know! and love the tip on adding sugar. That can come in handy for so many recipes. Vicki Woesthaus

I made this soup for my wife, daughter, and son in law and followed the recipe exactly and it was fantastic. We are all fans of spicy so i used a poblano pepper and this soup was a hit with all 4 of us. As with most recipes (for me anyway) I triple the prep time, it took more than an hour to cook the bacon and chicken, peel and cut the potatoes and cut the onion and pepper but it was absolutely worth it. I will be making this again and will make one minor change and use only one potato but that is strictly a personal thing. Thanks for posting!!!
Donna John
So happy ya'll enjoyed the recipe! And thank you for sharing your tips on making it. DaveWH

I definitely have to try this recipe it looks divine! And I must say I'm not a big fan of eating/making soups!
Donna John
I hope you enjoy it as much as we did!

Can I substitute half and half for whipping cream ?
Donna John
Sure! It may be a little thinner, but it shouldn't affect the flavor.
