Butternut Squash Smoothie: A Healthy Way to Welcome Fall!

Get visions of pumpkins in your head as fall makes its arrival? Stop! Instead, grab a butternut squash and whip up this healthy butternut squash smoothie. 

You'll need:

  • 1 cup mashed, cooked butternut squash
  • 3/4 cup almond milk
  • 3/4 cup orange or pineapple juice
  • 1/2 teaspoon cinnamon
  • 1/4 – 1/2 teaspoon ground ginger
  • 2 tablespoons nut butter
  • 1/2 teaspoon vanilla
  • honey or maple syrup (optional)

Here’s how to make it:

  1. Put all the ingredients into a blender except honey or maple syrup. 
  2. Pulse until smooth.
  3. Taste and add a little honey or maple syrup, if desired.
  4. Pour into a glass, sprinkle with a little cinnamon and serve.
