Vegan Tacos: How to Make Walnut & Lentil Taco "Meat" With Quinoa Rice

I have been on a food processor kick, so when I saw a recipe for walnut "meat" I had to try it. I am so glad I did! Here is my rendition. Use this "meat" in a taco, burrito, lettuce wrap or straight out of a bowl. Dress it up with salsa, veggies like sweet potato, Daiya shreds, black olives or avocado. Enjoy!

You'll need:

  • 1 cup walnuts
  • taco seasoning
  • onion powder
  • garlic salt
  • lentils, cooked
  • quinoa and brown rice mix, cooked (I like Seeds of Change Quinoa Brown Rice With Garlic)

Here's how to make it:

  1. Soak walnuts in water for an hour. Strain and add to your food processor.
  2. Add taco seasoning, onion powder and garlic salt. Blend until it resembles a ground meat texture.
  3. Fold in the cooked lentils and quinoa/brown rice.
