No-Bake Peanut Butter Chocolate Oatmeal Cookie Recipe Is a Holiday Classic

Peanut butter and chocolate oatmeal no-bake cookies are a classic that we always go back to. We've made all kinds of cookies and treats to use as gifts in tins for family and friends, but it's always these drop cookies that everyone asks for.

This easy no-bake cookie recipe is perfect for your Christmas cookie trays and dessert table. And no oven needed that'll take up valuable cooking space during the holidays. These low-sodium chocolate peanut butter oatmeal cookies make great food gifts. Be sure to print out this dessert recipe to share with friends and family.

To make these easy, gluten-free cookies you will need granulated sugar, milk, unsalted butter, cocoa powder, old-fashioned rolled oats, peanut butter, vanilla extract and salt. Let the kids help you mix them up!

  • Do not use quick or instant oats. If you do the cookies will not turn out right.
  • Oats are naturally gluten-free. But check the package if you are unsure.
  • If it's too warm in the house the cookies will not harden up, so make sure the house is cool. 

Here’s how to make it:

  1. Lay a sheet of wax paper on your counter or use it to cover large cookie sheets. 
  2. Bring the sugar, milk, butter and cocoa to a boil in a medium saucepan over medium heat, stirring occasionally, then let boil for 1 minute. Remove from the heat. Add the oats, peanut butter, vanilla and salt. Stir quickly!
  3. Drop teaspoonfuls of the mixture onto the wax paper and let them sit about 30 minutes to harden and cool. (Make sure to do this in a cooler room – if it's warmer they don't set up as well.)
