Grandma's Orange Ginger Carrots Recipe Is What to Make For Thanksgiving

My grandchildren have already called me to check out what is on our Thanksgiving menu. They wanted to make sure I was making Aunt J's orange ginger carrots recipe. This vegetable side dish recipe is loved by all – young and old.

One of our most precious aunts shared this simple carrot recipe with our family. We have been enjoying this low-sodium recipe for more years than I can remember. I hope that once you try these delicious gluten-free carrots, you will be as hooked as we are!

To make these simple and easy fall-inspired vegetarian carrots you will need a pound of fresh carrots, granulates sugar, cornstarch, salt, ground ginger, orange juice and butter. After cooking the carrots until tender, they are simmered with the other ingredients until sweet and glazed all over. Delicious!

Don't wait until Thanksgiving to enjoy these carrots! They are a wonderful side dish any day of the week with chicken, lamb, beef, pork or even seafood.

  • Some people do not like to peel their carrots. If that's you, just wash the carrots before slicing.
  • For some color, garnish with chopped fresh parsley.
  • You can use pre-squeezed orange juice, but if you have time, squeeze your own. Fresh is always best.

Here's how to make it:

  1. Cook the carrots until tender. Set aside.
  2. Combine the sugar, cornstarch, salt and ginger in a saucepan. Add the orange juice and butter. Cook until slightly thickened. 
  3. Add the carrots. Stir to combine. Garnish with parsley, if desired.
