Meatless Monday: How to Make Quick, Easy & Healthy Lentil Soup! by Beth Aldrich, CHC, AADP, CNT
This lentil soup recipe should encourage the home cook in us all to get some soup on! Here's the incredibly easy and delicious recipe.
- 1 quart vegetable broth
- 1 cup lentils, rinsed
- 1 onion, chopped
- 3 cups chopped vegetables of your choice (carrot, kale, celery, etc.)
- 2 cloves garlic, minced
- 2 tablespoons Spike Seasoning
Here's how to make it:
- Add all ingredients to a large pot.
- Bring to a boil and simmer, covered, about 30 minutes.
