Meatless Monday: How to Make Quick, Easy & Healthy Lentil Soup!

This lentil soup recipe should encourage the home cook in us all to get some soup on! Here's the incredibly easy and delicious recipe.

You’ll need:

  • 1 quart vegetable broth
  • 1 cup lentils, rinsed
  • 1 onion, chopped
  • 3 cups chopped vegetables of your choice (carrot, kale, celery, etc.)
  • 2 cloves garlic, minced
  • 2 tablespoons Spike Seasoning

Here's how to make it:

  1. Add all ingredients to a large pot.
  2. Bring to a boil and simmer, covered, about 30 minutes.
