  • Because of the coconut oil, this candy really does melt fast! If you’re feeling generous and taking some to a friend, put the container on an ice pack for the ride. (Been there, done that!)
  • Store the candy in an airtight container in the fridge or in a cool place.

Here’s how you make it:

  1. Combine the peanut butter, honey, coconut oil, cocoa powder and vanilla. Mix well. Stir in the cashews.
  2. Pour mixture into a loaf pan that’s been lined with aluminum foil that overlaps the top edges (so it’s easy to lift out).
  3. Put in the refrigerator for at least 2 hours to set. Remove candy and cut into bars or chunks. Keep uneaten candy refrigerated – it’ll melt at room temperature.

Hi, first I gotta say I looove your recipes. I’m trying this one but with a twist. Instead of cashew I’m using hazelnuts. I peeled them and tossed it in the oven for 10 minutes before chopping them and mixing with the chocolate. I’m still waiting for the mixture to cool so I’ll be sharing the results.
