Healthy Sandwiches: How to Make a Satisfying Superfoods Sandwich

We've all heard about superfoods – and most of us love a good sandwich. Combine the two by making this healthy vegetarian sandwich for lunch or dinner. For a crunchier sandwich, toast the bread. 

You'll need:

  • 4 slices whole-grain bread
  • 1 large avocado
  • 1 hard-boiled egg, chopped
  • 4 radishes, sliced
  • 1/3 cup pea shoots, baby arugula or baby spinach

Here's how to make it:

  1. Cut the avocado in half and remove the pit. Mash half of it in a small bowl. Cut the other half in slices.
  2. Spread the mashed avocado on two slices of the bread. Top with the avocado slices.
  3. Add chopped hard-boiled egg.
  4. Add the sliced radishes.
  5. Top with pea shoots, baby arugula or baby spinach.
  6. Top each sandwich with the other slice of bread. Makes two sandwiches.

What kind of salmon do you use can you use fresh salmon smoked salmon and I have to read the rest of the recipe and do you make them ahead of time and store them and then prepare them and what's the best oil to use thank you
I don't know how to make this and the mayonnaise that you use can you use miracle whip Hellmann's blue ribbon mayonnaise and that kind of avocados what are the best kind to use I'm going to try to get on board on some of these recipes and share my results thank you
