Ingredients

Here's how to make it:

  1. Whisk together all ingredients in a large bowl.
  2. Store in a cool place in an airtight container.

How to use it:

  1. Use this gluten-free flour mix in place of regular all-purpose flour, substituting 1:1.
  2. To use the flour for muffins and quick breads, add 1/2 teaspoon of xanthan gum for 2 cups of flour.
  3. For cakes and cookies, add 3/4 teaspoon xanthan gum for 2 cups of flour.

Note: Bread and pizza are not as easy to replace 1:1.

Gluten is a tricky one for eczema sufferers who may have a hypersensitivity reaction, but not allergic one
Also many types of gluten reactions, wrote a blog post on it :)

Mei Marcie, correct. There really is no gluten allergy; just an allergy to wheat (or any other gluten-grain). For my daughter, a 100% gf diet is the only thing that keeps the itchies away. And unfortunately, the test for celiac disease is not always accurate. Misdiagnosis is very common. Positive=Positive but Negative always equals "Maybe".

Yes Amy Fothergill , same for food allergy testing. Actually for blood IgE test, I think false positives are possible as well, that's why the double blind placebo is always considered the gold standard for allergy testing.

Thanks for sharing the gluten free baking mix. Should I seal it and keep refrigerated if I don't use it often?
Amy Fothergill
Hi Rachel! I would definitely keep it sealed. I don't refrigerate mine because I use it quite often. Base it on your climate, as well. If you are going to use it in the next month, it should be fine. Thanks!
