- 1 seedless watermelon (7 to 8 pounds), chilled and cubed
- 1/2 cup extra virgin olive oil (or less)
- 3 limes, juiced
- 1 teaspoon salt
- 1 cup fresh chopped mint
- 1 1/2 cups crumbled feta cheese (goat or sheep milk feta is the best)
