Recipe Review: Get In My Belly's Sweet & Spicy Chicken

A friend of mine posted one of those food videos and it pulled me in, as most do. I found myself with every ingredient for Get in My Belly’s Sweet and Spicy Chicken. Score! It was on the menu that night. Did I regret the decision? Not at all! It was delicious and was easier to make than getting me to order a glass of wine with dinner.

How It's Made: I pretty much followed the recipe, with the exception of using four chicken breasts instead of eight. Empty-nesters don’t have time for eight chicken breasts. For the sweet and spicy seasoning blend, I made it with the same measurements. Half of 1 1/2 tablespoons? Too much math that late in the day. I used the entire amount when I massaged it into those chicken breasts. While it was in the oven broiling for 12 quick minutes, I mixed up the honey-Dijon glaze. Super simple, and it was the secret (sweet) sauce that put the recipe over the edge. I did keep my oven rack in the middle position, not top as suggested. Not a big broiler, I was nervous the chicken would burn. The middle worked perfectly. 

Would I Make It Again? Most definitely! When a recipe is this easy, yummy and my husband loves it, too, it makes this woman print it out and put it in her coveted recipe binder. Done.

I didn't use Nature Nate's honey as suggested in the recipe, I used what I had on hand. But it must be good to be called by name. It's pure, raw and unfiltered.
