4-Ingredient Shamrock Ice Cream Pie Recipe: An Easy Chocolate Mint Pie Recipe for St. Patrick's Day

Need a last-minute St. Patrick’s Day dessert that you can whip up for a crowd? No problem! This easy shamrock pie recipe is quick to make and so refreshing.

This ice cream pie has just four ingredients: a premade graham cracker pie crust, mint chocolate chip ice cream, mint cookies and hot fudge. Half of the ice cream is spread into the bottom of the graham cracker pie crust then topped with crushed mint cookies. Freeze for 30 minutes before spreading with the remaining ice cream. Drizzle with the hot fudge sauce and sprinkle with more crushed cookies. Freeze until firm. Top with whipped cream right before serving. Delish!

If you can't find mint chocolate chip ice cream, you could use vanilla ice cream and tint it green with food coloring. Use whatever chocolate cookies you prefer for this easy ice cream pie recipe. Happy St. Paddy's Day!

  • 1 premade graham pie crust (I used a chocolate pie crust but when I use coffee ice cream I use graham)
  • 3 pints mint chocolate chip ice cream, softened
  • mint cookies (Oreos or Thin Mints), crushed
  • hot fudge
  • whipped cream

Here's how to make it:

  1. Fill the pie crust with one pint of the ice cream. 
  2. Top the ice cream with the crushed cookies. Freeze for 30 minutes.
  3. Remove from freezer and spread the other pint of ice cream on top. Drizzle with hot fudge and more cookie pieces. Freeze. 
  4. Slice and top with whipped cream before serving.
