Making a healthy vinaigrette dressing or sauce takes only minutes and requires few ingredients.

Use this simple formula: 1 tablespoon of vinegar or citrus, 1 tablespoon olive oil and 1 teaspoon maple syrup. Add a pinch of salt and pepper. Taste the dressing. Add an extra teaspoon or two of olive oil if you prefer a less sharp flavor. Minced fresh herbs help match the dish to other components of your meal.
