Looking for a balanced meal, fast? Let them eat pizza – and salad, too! Salad-Pizza, an East Coast delicacy, begins with Neapolitan-style pizza, preferably made with organic ingredients. Then add:
- tomato sauce base
- mozzarella
Once cooked, top your pie with:
- mixed green salad tossed in balsamic vinaigrette
- or trade tomato sauce for pesto, then toss the salad in a lemony vinaigrette
Clean, convenient food. Don’t tell the kids; just construct it right in front of them. They’ll think you’ve gone off the farm, but really, you’re just leading them back to it!
