Recipe Notes

  • Use whichever cheese you prefer: Gruyere, mozzarella, Swiss cheese, cheddar, Monterey Jack or feta all work well.
  • Use whichever herbs you prefer: chives, oregano, thyme, dill, rosemary or parsley all work well.
  • Store leftovers in an airtight container in the refrigerator. Reheat in the oven or microwave.

Here's how to make it:

  1. Combine the flour, sugar, salt, baking powder and baking soda in a large bowl.
  2. In another bowl, combine the buttermilk and egg.
  3. Add the cold butter pieces to the dry ingredients. Use your fingers or a pastry cutter to make coarse crumbs.
  4. Add the wet ingredients to the dry ingredients. Add the cheese and herbs. Stir to combine.
  5. Knead the dough a few times to bring it together.
  6. Put the dough onto a floured work surface. Pat the dough with your hands or use a rolling pin to make the dough into a circle. Cut the circle into wedges. Place them on a baking sheet lined with parchment paper. Put the scones into the refrigerator for about 20 minutes to chill (this step is optional, but do it if you have time).
  7. Brush the tops of the scones with the cream or milk.
  8. Bake in a preheated 425-degree F oven for about 20 minutes or until golden brown.

Just made this recipe . My oven is so good I lowered the temperature to 400 and brushing milk on them, they came out too dark... not burnt ,just darker than i prefer. Still taste good . Next time no milk brush and using a different cheese
Donna John
Yes, I have the same issue with my oven. I always have to lower the temperature. Good to know about the milk, and curious what cheese you'll use next. k m

Definitely want to try these. Scones always make me think of my mom, who always called them "sconces," even after she knew the right pronunciation. I always giggle to myself (and get a little sad at the same time) when I see them anywhere!!
Elisa Schmitz
I know what you mean, Terri Kendrick , about the memories. Funny how food brings so much back. Hope you enjoy this yummy scones/sconces recipe! 💗
